Life has been pretty hectic since my return to work so blogging hasn't really been on my mind at all if I'm perfectly honest but I think that's just how my family works in general and as much as sometimes I'd love to be one of those mums who have it all together at all times and are super organised it's just not me and I know I'd be bored (sorry not sorry !) with a routine pretty quick... Anyhow.. I just felt like popping over here as something pretty exciting has happened and I just thought this is the best place to share the joys of my tiny victory over .... drumroll please... the one and only AQUAFABA !!! Yes, you're reading this correctly - I have just stated that I have finally mastered the art of whipping THE perfect aquafaba peaks AND have managed to veganise my mamas very old recipe by replacing the egg whites with the very chickpea thickened brine ! Laugh all you want people but this has been

killing me for weeks now and the amount of homemade hummus we've had on this weird whipping journey was beginning to bother me so it was time to finish this ridiculous battle! I must say that having recently purchased a new stand mixer might have had something to do with my perseverance to end this chapter of my life so let's just say that I can carry on as normal now... Mission accomplished!

Now let's move on to the actual reason worth talking about here... My new Power Matcha Donuts ! They are just a beautiful treat





Power Matcha Donuts

Yield : 10 small donuts

Prep time: 15min

Cook time: 15 min

Sweet Coconut Diaries


Ingredients:

♡ aquafaba from 2 cans of chickpeas (reduced to 1 cup)

♡ 1 tsp cream of tartar

♡ 2 tbsp avocado oil

♡ 1/2 cup golden caster sugar

♡ 1 tsp vanilla extract

♡ 1 cup GF self-raising flour

♡ 2 tbsp @yoursuperfoods Power Matcha blend

Method:

♡ Sieve all dry ingredients together into a bowl and set aside

♡ Preheat the oven to 180C

♡ Beat the aquafaba (with cream of tartar) with a hand or stand mixer till white and fluffy and stiff peaks form

♡ Add sugar 1-2 tbsp at a time beating continuously till combined

♡ Add the vanilla and oil and keep beating for another few minutes

♡ Now very gently add half of dry mixture to the aquafaba and fold in with a spatula, add the second part and continue to gently fold I till combined

♡ Transfer batter to a piping bag and into a donut silicon moulds

♡ Bake for 15 min or till the stick comes out clean

♡ Cool completely




Matcha Glaze (optional)

♡ Handful of fresh spinach

♡ 1/2 cup icing sugar

♡ 1 tsp @yoursuperfoods Power Matcha

♡ 2 tbsp nut milk

♡ Blend all together in a blender till super smooth and glossy, dunk your donuts and let them set for 5min
