WHITE CHOCOLATE & MATCHA TART

Those who know me well are no strangers to trying new and unexpected flavours when visiting and matcha has been on the menu for some time now. In all honesty I haven't heard of it till last year when it became oh so trendy - I was more intrigued by the superpower part than the actual taste and really did not fall in love with it from the first try. I do believe in second chances though so the testing begun. I have used it in different smoothie blends, desserts and tried it with different sweetness as a frothy latte but only till I discovered that there are other options (like combining some other amazing superfoods with it) combined that I will fall in love with. Now let's talk about the not so superfood white chocolate combination (remember the -ISH in healthy(-ish), right??) because it is just divine! This is one of the BEST and the FASTEST tarts you’ll ever make and I think you will be coming back for seconds. The topping requires only four ingredients and it’s just to die for delicious! The base is my new found favourite zero waste type - I have made some almond cookies few days ago from the leftover pulp after making almond milk so this is really me on a mission to make sure that I do not throw away something that can still be used. Base:


Ingredients:


♡ Preheat the oven to 200C.

♡ 2 almond cookies *

♡ 3/4 cup buckwheat instant flakes

♡ 5 medjool dates

♡ 1/3 cup warm water

♡ 2 tbsp almond butter


Method:

Preheat the oven to 200C. Pulse the cookies and buckwheat flakes into flour in a food processor and transfer into a bowl. Blend dates with water and almond butter into smooth paste and add the dry mix spoonful at the time blending on low speed till you achieve a dough. Grease a 15cm tart tin with coconut oil and form the dough into a base and bake for 8-10m - this is to slightly dry out the base and crisp it out slightly. Leave in a tin to cool.


* you can use any nut based dried out cookies


Topping:


Ingredients:


♡ 200g white non diary chocolate- melted

♡ 2 ripe avocados

♡ 1/2 lemon - juiced

♡ 2 tsp @yoursuperfoods Power Matcha blend **


Method:


Melt the chocolate and blend with the remaining ingredients till smooth and velvety and pour into the base. Leave to set in a fridge for 30min to 1h.



** There are really beautiful ingredients in this one that make the flavours combo with chocolate and avocado just amazing. I have used this blend for a couple of weeks and it really is amazing in my opinion.
